Holiday Recipe

As a thank-you to our friends and clients this year, we are sharing a little of our Chef's genius. Try out this original recipe from Chef Godfrey, using as many local NB products as you can!

Fredelicious Candied Walnuts

Great for eating as a snack or to add to a salad or entrée. Customize the flavour profile to your taste!

2 cups sugar
1 cup Crosby’s molasses
1 cup local craft beer*
2 cups walnuts (or desired nut of choice)
2 tsp (or more) of spice**

*Water can be substituted for beer.  But Fredericton has a lot of delicious craft beer to choose from!
**We suggest choosing from New Brunswick company Barbours line of spices, such as:

  • Cracked sea salt and pepper
  • Cinnamon and nutmeg
  • Cajun


Preheat oven to 350° degrees.

Combine sugar and molasses in a medium saucepan. Mix until smooth over low heat. Add beer or water and bring to a boil over medium-high heat. Watch carefully and stir often.

Once sugar is completely dissolved, add walnuts and return to a boil. Boil for 1 minute. Strain walnuts, reserving liquid for future use if desired.

Combine strained walnuts with 2 tsp spice, or more to taste. Spread walnuts in an even layer on a parchment-lined sheet pan. Bake 14 minutes, stirring once half way through.

Walnuts should be dark or golden brown when ready. Let sit at room temperature until cool. Taste and adjust seasonings as desired. If you want to add more spice, salt or sugar, place walnuts and desired seasonings in a large freezer bag and toss to combine.

Store candied walnuts in an airtight container at room temperature.
